Here is an idea for a quick and easy spring recipe…

Pea, broad bean, radish, feta & cereal salad

Cook Time 20 minutes

Ingredients

  • 100 g cereal/legumin mix (e.g. bulgur, quinoa and split peas)
  • 1 handful fresh raw peas
  • 1 handful raw beans
  • 70 g feta cheese
  • ½ black radish
  • 6 pink radishes
  • mint leaves
  • thyme
  • salt
  • pepper
  • olive oil
  • A little lemon juice
  • squash seeds optional

Instructions

  • Cook your cereal/legumin base according to instructions and rinse with cold water after cooking to cool it down. Set aside.
  • Cut the feta into small cubes. Finely chop the mint.
  • Tart your peas and peel the beans. Wash the radishes and cut them into thin slices.
  • Mix the cereal/legumin base with the vegetables and feta cheese in a salad bowl.
  • Add the mint, a little thyme, pepper and a little salt. Drizzle with olive oil and a dash of lemon juice. Taste, and adjust the seasoning if necessary.
  • Sprinkle with pumpkin seeds once the salad has been served to decorate in order to add more crunch to this spring salad.

Notes

You can modify the mixtures of cereals and legumins that make up your base. Some ideas: small spelt & lentils / wheat & split peas / millet, quinoa & lentils…
You can of course add / replace vegetables (raw cauliflower, broccoli, or zucchini…?), change the cheese (mozzarella, fresh goat’s cheese…) or don’t use it for a vegan option.
You can also change the seasoning (basil, chives…) or add ingredients, such as chickpeas for example.
