Open faced goat cheese, thyme jelly & plum sandwich

Good bread
30gfresh goat cheese
1tbspthyme jelly
2Damson plums
1sprigthyme
pepper
Instructions
Cut a nice slice of bread.
Spread the goat cheese on it.
Brush the cheese with the thyme jelly.
Cut the plums into thin slices and place them on top.
Season with pepper and sprinkle with a little thyme. It's ready yet!
Notes
You can make thyme jelly yourself the same way you would make any jelly: you just have to heat and infuse a bunch of fresh thyme (flowered or not) in some water with a little lemon, then filter and turn into jelly using jam sugar or sugar and agar agar.
You can use other types of fresh cheese, cow's or sheep's cheese for example. If you don't have thyme jelly, you can replace it with thyme honey for example. You can also try other fruits than Damson plums...
