Roasted potatoes with herbs

Ingredients

  • 3 allians potato very firm type
  • 3 vitelotte potato blue-violet type
  • 1 sprig of rosemary
  • 2 sprigs of thyme
  • salt
  • pepper
  • olive oil

Instructions

  • Wash the potatoes. Brush them under a trickle of water.
  • Cut them in halves.
  • Trim the potatoes with geometrical patterns of your choice, using the tip of a knife: strips, streaks, leaves, etc.
  • Brush the potato halves with olive oil.
  • Sprinkle with thyme and rosemary. Season with salt and pepper.
  • Bake for 40 to 45 minutes in the oven at 220°C until the potatoes are tender (press down a knife to check).
