Sprinkle with pumpkin seeds once the salad has been served to decorate in order to add more crunch to this spring salad.
Notes
You can modify the mixtures of cereals and legumins that make up your base. Some ideas: small spelt & lentils / wheat & split peas / millet, quinoa & lentils...You can of course add / replace vegetables (raw cauliflower, broccoli, or zucchini...?), change the cheese (mozzarella, fresh goat's cheese...) or don't use it for a vegan option. You can also change the seasoning (basil, chives...) or add ingredients, such as chickpeas for example.
