Persian potato patties

also called "kuku sibzamini" in Persian

Ingredients

  • 4 big potatoes
  • 2 large eggs
  • 40 g flour any kind
  • 2 green onions or 1 small yellow onion
  • dried mint or parsley
  • Turmeric powder
  • Coriander powder
  • salt
  • pepper
  • 1 handful barberries dried
  • saffron optional
  • 1 clove of garlic optional

Instructions

  • Peel and cut the potatoes into small pieces. Steam them until they are cooked. You can also cook them in boiling water. Meanwhile, chop your onions and garlic if you add some.
  • Once the potatoes are cooked, mash them using a fork or potato masher. Then add the eggs and continue mashing and mixing.
  • Add all the spices, onions and garlic and mix well. Finally, add the flour and mix.
  • Heat a drizzle of oil in a pan. Take a portion of the mixture with a wooden spatula and form a pancake directly in the pan (about 8 to 10 cm in diameter and 1 cm thick). Brown each side for about 4 minutes over medium heat (they should be nicely browned), and set aside.
  • It is better to make small patties (like the one on the picture) to be able to turn them well.

A few additional ideas:
Regarding the ingredients
In terms of seasoning, as specified in the list of ingredients, you can adjust the spices to make a recipe that suits your taste, even if you choose to use spices which are not so commonly used in persian cuisine ;).
You can try replacing the mint with dill for example. Or barberry berries with cranberries. But the seasoning is very important because it will give taste to your patties and make it an interesting recipe !
You can also add other vegetables (finely sliced carrots, beets, why not mushroom?), or add meat. In this case, the patties are called kotlet, a typical recipe similar to this one but which basic ingredients are potato and ground beef (you can also replace it with lamb) .
How to serve the patties?
Serve with Iranian flat bread (close to lavash bread), raw vegetables (tomatoes, cucumbers) or a Mediterranean-inspired salad for a light meal for a light meal.
But why not also serving it as a snack with a yogurt-based mixture like the Iranian mast o khiar (Greek yogurt, mint, cucumber, salt and pepper, blond raisins), or cacik (garlic, cucumber yogurt and dill) or kashk-é bademjan (Iranian eggplant caviar)?
You can also serve the patties as a side dish with fish or meat.
