Homemade burritos

Ingredients

For 8 wheat tortillas (you can also buy ready-made wheat or corn tortillas)

  • 240 g white flour
  • 60 g butter
  • 130 ml tepid water
  • 1/2 tsp salt

Filling

  • 600 g red beans
  • 2 tomatoes fresh or from can depending on the season
  • 1/2 large red onion
  • 1 clove of garlic
  • 1 avocado
  • A few salad leaves
  • 4 tbsp thick sour cream
  • 1/2 tsp oregano
  • 1/2 tsp paprika
  • 1/2 coriander
  • salt
  • pepper
  • 2 tsp hot sauce or spicy spice blend for Mexican food
  • lime juice
  • few cilantro leaves

Instructions

Preparation of the tortillas

  • Pour the flour and salt into a bowl.
  • Cut the butter into small cubes and add it to the flour. Mix with your fingertips to obtain a crumble texture.
  • Then add the water and knead until you get a paste that does not stick and is very elastic.
  • Form a ball and let stand while you prepare the filling.

Preparation of the filling

  • Finely chop the onion and garlic clove, dice the tomatoes.
  • Brown the garlic and onion in a pan in a little olive oil, and then add the diced tomatoes.
  • Add the spices (paprika, oregano, coriander) and let it cook for another 4 to 5 minutes.
  • Then incorporate the beans and lower the heat, simmer over low heat for 10 minutes.
  • You can pour two spoons of tomato sauce according to the consistency you want.

Assembling the tortillas

  • Divide the dough into 8 balls of equal size. Take a ball and leave the other balls in the bowl under a slightly damp cloth.
  • Flatten the ball under your hands and start to form a disc. Continue with a rolling pin until you obtain a thin disc with a diameter of 15 to 20 cm.
  • Heat a pan (or if you have one, a crepe maker), add a little drizzle of olive oil, and cook the tortilla 2/3 minutes per side over medium heat. Do not let the tortilla burn / darken.
  • Once your garnish and your tortillas are ready, put the tortilla in a pan on low heat to warm it up, spread the filling on half of the tortilla.
  • Mix the sour cream with lime juice and a few cilantro leaves and put some on top of your filling.
  • Off the heat, add a few avocado slices and a salade leaf and close the tortilla in half. You can also put the filling in the center, and roll your tortilla to obtain a burrito shape.

Notes

You can add meat to the filling (pieces of chicken, beef for example), some grated cheese,  strips of peppers ... Treat yourself!
You can also make corn tortillas, or replace white flour with wholemeal flour, etc.
