An original zero waste recipe to recycle your radish tops! Eat this pesto with pasta, on a sandwich or simply with a spoon !
Radish haulm and spinach pesto
A great recipe for recycling its haulms!
Ingredients
- Half the tops of a bunch of radishes
- 50 g baby spinach
- 1 clove of garlic
- 20 g pine nuts
- 3 tbsp almond or hazelnut powder
- 50 g parmigiano cheese (or comté cheese alternatively)
- 3 tbsp olive oil
- 1 tbsp lemon juice
- pepper
- nutmeg optional
Instructions
- Wash the radish tops well until the water runs clear. Also wash the spinach. Then in a blender or small chopper, put a first handful of radish tops (removing the large stalks if necessary) and spinach, and a spoon of olive oil, and mix. Gradually add the rest of the tops, spinach, oil, and lemon juice and mix gradually.
- Chop the garlic clove and add it to your preparation, as well as the almond or hazelnut powder, pine nuts and cheese. Mix again.
- Do not hesitate to taste and adjust the quantity of the ingredients to your taste. Then add the pepper and nutmeg, and taste again.
- You can eat this pesto with raw vegetables, on a sandwich with salad and raw vegetables, with pasta, soup … 🙂 whatever you like!

You can adapt the seasoning: the type of cheese (or no cheese for a vegan version), nuts, oil. Let your creativity go wild!
The important thing is to taste as you go along, to adjust the seasoning if necessary and to make sure that you like the taste 🙂 The pesto can have a fairly strong taste.
