A delicious vegan pie with apples, plums and blueberry jam ! The dough is very easy to prepare with a bit of crunchiness.
Old style apple & plum pie
Ingredients
- 220 g flour
- 85 ml vegetal oil
- 85 ml warm water
- 4 g salt
- 1 tsp baking powder
- 4 to 5 medium apples
- 10 Damson plums
- Wild blueberry jam
- Almond powder optional
Instructions
- Take a large tupperware or a container you can close and shake.
- In the container, add the ingredients in this order: flour, yeast, salt, oil and hot water.
- Shake the container several times horizontally and then vertically.
- Continue to work the dough a little with your hands at the end to form a ball.
- Spread the dough on a baking paper and place it in a pie tin.
- Prick the dough with a fork.
- Brush the pie base with a thin layer of wild blueberry jam.
- Cut the apples into fairly thin slices, and the plums in halves.
- Make a first circle with apple slices, then alternate with a circle of plums, until you cover all the pie.
- Sprinkle a little almond powder.
- Bake the pie at 180°C for 30 to 35 minutes. Check on the cooking time.
- Serve plain, or accompanied by a scoop of ice cream or a little whipped cream 🙂
Notes
You can largely adapt this recipe to the ingredients you have on hand and according to your tastes.
For the dough, mix different flours (chestnut, old varieties of wheat, etc.), test different types of oil (I personally prefer olive oil to rapeseed oil, you could also try coconut oil).
For the filling, you can use other plums than Damson type, and replace the wild blueberry jam by the jam you like (figs, apple jelly, elderberry…).
You can also replace almond powder by slivered almonds, or crushed peeled pistachios for instance…
