Don’t know what do to with your egg whites? You are an almond lover? Try this recipe! Inspired by the traditional French cake “financier”, this is a very easy cake to prepare with a delicious almond flavour. Enjoy!
Almond cake, financier style
Ingredients
- 80 g almond powder whole or not
- 100 g flour
- 80 g sugar
- 75 g butter
- 4 egg whites
- 1 tbsp baking soda or baking powder
- 1 pinch of salt
- 1 tbsp rum
- 1 tbsp bitter almond flavor
Instructions
- In a salad bowl, mix the egg whites and sugar until you obtain a very homogeneous mixture.
- Add the flour, almond powder, yeast and salt. Mix vigorously with a whisk.
- Melt the butter and add it to the mixture while continuing to mix well.
- Add the rum and bitter almond flavouring and mix again.
- Preheat your oven to 200°C.
- To make a medium size cake, cover with baking paper a round 14 cm diameter cake tin (or a square tin of about 12 cm).
- Pour the dough in the tin.
- Bake for 25 to 30 minutes and check the cooking. The cake must remain very soft so be careful not to overcook it.
- You can also pour the dough into financier or madeleine cake tins. In this case, bake a little less time (15 to 20 minutes) and check the baking.
Notes
For a cake with even more almonds, sprinkle with slivered almonds before cooking!
You can also add hazelnut powder mixed with the almond powder.
You could also add some coconut or chocolate chips to mix different flavours!
